Weight Watchers Egg Rolls with Peanut Dipping Sauce recipe - 4 points

I always thought egg rolls are very hard to prepare… that’s until I found this recipe. You won’t believe how easy it is to make your own homemade egg rolls… and they taste so much better than the store bought ones!

These egg rolls can also be frozen (before or after frying) for a quick and delicious meal. For a vegetarian version, just leave the pork out.

Weight Watchers Egg Rolls with Peanut Dipping Sauce recipe

Ingredients

Egg rolls
1 (16 ounce) package egg roll wraps
1/2 lb pork tenderloin, cut into very small pieces
1 egg, beaten together with
1 teaspoon sesame oil
1 tablespoon vegetable oil or peanut oil
2 cups (4 ounces) thinly sliced cabbage
1 1/2 medium carrots (1 cup), peeled and julienned
3 cups (10-12 ounces) fresh bean sprouts
1/2 cup white onion, finely diced
coarse-ground garlic salt
1 tablespoon water

Peanut sauce
1/4 cup creamy peanut butter
1 1/2 tablespoons pineapple juice or chicken broth
2 tablespoons low sodium soy sauce
1 teaspoon Asian chili oil
1 teaspoon sesame oil
1 1/2 tablespoons brown sugar
1/2 teaspoon ground ginger

This is a very nice sauce that’s not too spicy. It’s great served with crab cakes.

Weight Watchers Thai Dipping Sauce recipe - 2 points recipe
Makes 8 servings

Ingredients
8 Thai red chili peppers, seeded
1 (28 ounce) can tomatoes
4 cloves garlic, crushed
1 shallot, minced
2/3 cup rice vinegar
2/3 cup sugar
2 teaspoons salt

Preparation
1. Combine all the ingredients in a small saucepan and bring to a boil.
2. Reduce the heat to very low, cover and simmer for about 45 minutes (up to 1 hour), or until the sauce has thickened.
3. Taste and adjust seasonings as necessary.
4. Transfer to small dipping dishes and serve.

Weight Watchers Chasseur (Hunter) Mushroom Sauce recipe - 6 points

Weight Watchers Mushroom Sauce recipe
Makes 2 cups

Ingredients
1 cup chopped mushrooms
2 tablespoons butter
2 tablespoons minced onions
1/2 cup tomato puree
1/2 cup white wine
1 cup left over home-made beef gravy (or brown gravy made from a packet)
2-5 drops Maggi seasoning (or Worcestershire sauce)
salt and pepper, to taste

Preparation
1. Saute the onions in butter until very tender.
2. Add the mushrooms and saute for about 2-3 more minutes.
3. Add the wine, simmer, and reduce by half.
4. Add the beef gravy and tomato puree and simmer for about 5 minutes.
5. Add the Maggi seasoning, salt and pepper to taste (you can also try adding your favorite herbs to this sauce).
6. Serve with steak or roasted turkey or chicken.

Weight Watchers Cauliflower with Marigold Sauce recipe
Makes 4 servings

Ingredients
1 medium cauliflower
6 heads calendula flowers
1/3 cup grated cheddar cheese
1/4 cup butter
1 1/4 cups milk
1/2 cup white flour
salt and pepper, to taste

Preparation
1. Break up the cauliflower into large florets.
2. Steam the cauliflower for about 10-15 minutes (until cooked, but not too soft).
3. In a saucepan, melt the butter.
4. Add the flour until a soft paste is formed.
5. Slowly add the milk, whisking to keep smooth.
6. Turn down the heat to low and simmer the sauce for about 5-10 minutes (until it thickens).
7. Stir in the grated cheese (not allowing to boil).
8. Remove the sauce from the heat and add in the marigold petals, stirring carefully.
9. Place the cauliflower on a serving dish and pour the sauce over the top.
