Ingredients
  • 1 lb fillets tilapia
  • 1⁄2 cup cornmeal
  • 1 tbsp brown mustard, or honey mustard
  • 1⁄2 tsp vinegar
  • 1⁄4 cup milk
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1⁄2 tsp thyme
  • 1 tsp paprika
  • 1⁄2 tsp cayenne pepper, adjust to your taste
  • 1⁄2 tsp black pepper
  • 1 lemon, cut into wedges (optional)
Instructions
  1. Mix the mustard, vinegar and milk, and let set for about 15 minutes - his will make the dressing to coat the fish.
  2. In a separate bowl, mix the cornmeal with all the seasonings.
  3. Dip the fish fillets into the milk mixture and then into the cornbread mixture.
  4. Brush a broiling pan with a little olive oil or spray with cooking spray.
  5. Place the fish fillets on the prepared pan and place the pan under the broiler, 4 inches from heat.
  6. Broil for about 4 minutes on each side (or until the fish flakes easily with a fork).
  7. Serve with lemon wedges (optional).
