Weight Watchers Cod Puffs recipe
Makes 6 servings
Ingredients
2 lbs cod fish fillets
1 cup water
1 cup all-purpose flour
1 teaspoon baking powder
chili sauce or seafood cocktail sauce
lemon wedge, to serve
salt and pepper, to taste
Preparation
1. Preheat the oven to 375 degrees F.
2. Cut the cod fillets into 1-inch strips.
3. Combine the water, flour and baking powder.
4. Beat the mixture with an electric mixer until smooth.
5. Using tongs, dip the fish pieces in the batter, allowing the excess to drain off.
6. Allow to dry on wax paper before baking.
7. Bake the cod puffs for about 5 minutes (or until the fish flakes easily with a fork) in a covered dish.
8. Serve with lemon wedges and cocktail sauce or tomato chili sauce.
