Weight Watchers Low Fat Pumpkin Bars recipe
Ingredients
2 cups cooked pumpkin
1 2/3 cups sugar
1 cup fat free egg substitute
1 cup applesauce
2 cups flour
1/2 cup walnuts, chopped
2 teaspoons cinnamon
1 teaspoon baking soda
2 teaspoons baking powder
1 teaspoon salt
Icing ingredients
2 cups confectioners’ sugar
1 (3 ounce) package reduced-fat cream cheese, softened
2 tablespoons butter
1 -2 teaspoon skim milk
1 teaspoon vanilla
Preparation
1. Preheat the oven to 350° F.
2. Beat together the sugar, egg substitute, applesauce and pumpkin.
3. Sift the dry ingredients into a bowl, mix well.
4. Pour into a 15x10x1 pan and bake for about 23-27 minutes.
5. Let cool completely.
6. Mix together the icing ingredients (using more milk if needed).
7. Spread the icing over the cooled pumpkin bars.
