WeightWatchers Tom Yum Soup recipe

Ingredients:

6 cups chicken broth

3 tbsp Tom Yum base (found at Asian markets)

1 tsp sesame oil
-
2 cloves garlic (minced)
-
Juice of 1 lime
-
crushed red pepper flakes (optional)

Salt and Pepper (to taste)

1 cup sliced mushroom
-
1/2 thinly sliced white onion
-
1 sliced bell pepper (any color)

1/2 lb 0 point protein of your choosing (tofu, chicken, shrimp…)

1 tomato (halved and cut in to large cubes)

cilantro and green onion
Directions:

Combine broth, Tom Yum base, sesame oil, garlic, crushed red pepper, salt, and pepper in large pot and bring to a boil.

Add mushroom, bell pepper, and onion (and chicken if that is your protein) let simmer for 10 minutes

If you are using tofu or shrimp add them half way through the simmering to avoid them being over cooked.

Pour over tomato and add cilantro and/or green onion as a garnish.
Serves 4
