Ingredients
- 3 pounds waxy potatoes, cut into 1- to 2-inch chunks
- 2 cloves garlic, chopped
- 1 medium onion, chopped
- 1 ½ cups 1½-2 cups light cream
- 4 cups vegetable broth
- 1 ½ teaspoons salt
- ½ teaspoon ground pepper
- 1 teaspoon chopped fresh thyme
- toppings: shredded Cheddar cheese, sour cream, sliced scallions and/or crumbled cooked bacon
Instructions
- Combine the potatoes, garlic, onion, salt, pepper, thyme and broth in a 6-quart slow cooker. Cook on High for 4 hours or on Low for 8 hours.
- Add 1½ cups cream and blend the soup using an immersion blender (or using a regular blender in batches) until smooth. If the soup is too thick, add the remaining ½ cup cream.
- Serve with your desired toppings.
