Ingredients
- 8 oz packages cream cheese
- 12 oz package vanilla wafers
- 3⁄4 cup white sugar
- 1 tsp vanilla extract
- 2 eggs
- 21 oz can cherry pie filling
Instructions
- Preheat the oven to 350 degrees F (175 degrees C).
- Line miniature muffin tins with miniature paper liners.
- Crush the vanilla wafers, and place ½ teaspoon of the crushed wafers into each paper cup.
- In a mixing bowl, beat the eggs, sugar, cream cheese and vanilla until light and fluffy.
- Fill each miniature muffin liner with this mixture, almost to the top.
- Bake for about 15 minutes.
- Let cool, then top each mini cheesecake with a teaspoonful of cherry pie filling.

How would the points change if you used fat free cream cheese, reduced fat vanilla wafers, and fresh fruit on top?
