Ingredients
  • 4 cups cooked elbow macaroni (from about 2 cups dried)
  • 3 Tbsp. unbleached all-purpose flour
  • 1 Tbsp. unsalted butter
  • 1 cup nonfat sour cream
  • 1 1⁄2 cups nonfat milk
  • 2 cups shredded reduced-fat cheddar cheese
  • 1 egg, lightly beaten
  • 1⁄4 cup corn flake crumbs or ¼ cup dried breadcrumbs
  • 1⁄2 tsp. paprika
  • 1 tsp. dry mustard
  • 1⁄2 tsp. salt
Instructions
  1. Coat a 2-quart casserole with nonstick spray. Preheat the oven to 350 degrees F.
  2. In a medium saucepan, melt butter then stir in the mustard, flour, salt and paprika.
  3. Slowly pour in the milk, whisking continuously until there are no lumps in the flour. Continue stirring with a whisk, raise the heat, and cook until the milk thickens and start to bubble. Remove from the stovetop and stir in the egg, sour cream and cheese.
  4. In a bowl, toss the cheese mixture and the macaroni together and then pour it into the casserole. Top with the cornflake crumbs.
  5. Set in the oven and bake for about 20 minutes (until bubbling around the edges).
