This quiche recipe is great - so filling for so few points! I have it for breakfast with 1 low fat English muffin and it keeps me full until lunch.

Ingredients
  • 20 ounces frozen broccoli, chopped
  • 1 1⁄2 cups 1% low-fat milk
  • 3⁄4 cup Egg Beaters egg substitute
  • 3⁄4 cup bisquick low-fat baking mix
  • 2 garlic cloves, chopped
  • 1 teaspoon salt
  • 1⁄4 teaspoon ground black pepper
  • 1 medium red pepper, chopped
  • 1 medium onion, chopped
  • 4 ounces part-skim mozzarella cheese
Instructions
  1. Thaw, rinse and drain the broccoli.
  2. Put half of the broccoli in a 11x7 glass pan sprayed with Pam.
  3. Put half of the peppers, onion and all the cheese on top.
  4. Put the remaining broccoli, peppers and onion on top of that.
  5. Blend the milk, bisquick, egg beaters, garlic, salt and pepper in a blender until smooth.
  6. Pour the mixture over the broccoli in the pan.
  7. Bake at 400 degrees F for about 50 minutes (until lightly browned).
  8. Let cool a little, then cut into 6 pieces and serve.
