I need a little substance in my morning meal, so I created this breakfast recipe that fills me up and is super tasty. I sometimes add a slice of tomato and a thin slice of ham or turkey. Makes a great snack too.

Ingredients
- 1 hard-boiled egg, sliced into 4 or 8 pieces
- 1 whole wheat English muffin
- 1 teaspoon mustard
- 2 teaspoons low-fat mayonnaise
- 1⁄4 teaspoon vinegar
Instructions
- Mix the mustard, mayonnaise and vinegar to make a sauce.
- Cut the muffin in half and toast.
- Pour the sauce over each muffin half and place the egg slices on top.
- Season with salt and pepper to taste. Eat open faced.
