Ingredients
- 4 cups cooked elbow macaroni (from about 2 cups dried)
- 3 Tbsp. unbleached all-purpose flour
- 1 Tbsp. unsalted butter
- 1 cup nonfat sour cream
- 1 1⁄2 cups nonfat milk
- 2 cups shredded reduced-fat cheddar cheese
- 1 egg, lightly beaten
- 1⁄4 cup corn flake crumbs or ¼ cup dried breadcrumbs
- 1⁄2 tsp. paprika
- 1 tsp. dry mustard
- 1⁄2 tsp. salt
Instructions
- Coat a 2-quart casserole with nonstick spray. Preheat the oven to 350 degrees F.
- In a medium saucepan, melt butter then stir in the mustard, flour, salt and paprika.
- Slowly pour in the milk, whisking continuously until there are no lumps in the flour. Continue stirring with a whisk, raise the heat, and cook until the milk thickens and start to bubble. Remove from the stovetop and stir in the egg, sour cream and cheese.
- In a bowl, toss the cheese mixture and the macaroni together and then pour it into the casserole. Top with the cornflake crumbs.
- Set in the oven and bake for about 20 minutes (until bubbling around the edges).
