Ingredients
  • 1 (6 ounce) package mixed dried fruit, coarsely chopped
  • 1 1⁄2 cups whole wheat flour
  • 1⁄2 tsp. baking powder
  • 1 tsp. baking soda
  • 1⁄2 tsp. ground ginger
  • 1 tsp. cinnamon
  • 1 cup plain fat-free yogurt or 1 cup low-fat plain yogurt
  • 1⁄3 cup chopped walnuts (optional)
  • 1⁄4 cup apple juice concentrate
  • 1 large egg
  • nonstick cooking spray
  • 2 Tbsp. oil
Instructions
  1. Preheat the oven to 350 degrees F.
  2. Mix all the dry ingredients in a large bowl. Add the walnuts (if using) and dried fruits.
  3. Combine the egg, yogurt, oil and apple juice concentrate in a medium bowl.
  4. Make a well in the center of the dry ingredients and add the wet ingredients until blended.
  5. Coat a 9x13-inch pan with vegetable spray, spread the batter in the pan.
  6. Bake for about 45-50 minutes or until done. Let cool for about 10 minutes before slicing.
  7. Slice into 8 servings. If desired, freeze in individual portions.
