WeightWatchers Artichoke Spinach Zucchini Boats recipe

 

2 Green/Blue Points
Ingredients:
  • 3 Zucchini or Summer Squash (halved & seeds removed)
  • Salt & Pepper (to taste)
  • 2 clvs Garlic (minced)
  • 1 tbsp Olive Oil
  • 1 can Artichoke Hearts (chopped)
  • ⅛ cup White Onion (chopped)
  • 1 bunch Spinach (chopped)
  • ½ cup Part Skim Mozzarella Cheese
  • ½ cup Parmesan Cheese (2 tbsp set aside)
  • Egg
  • 1 tbsp Hot Sauce
  • 2 tbsp Worcestershire Sauce
  • Salt & Pepper (to taste)
Directions:
  1. Preheat oven to 375°. Place zucchini boats hollow side up on baking sheet. Sprinkle with Salt and Pepper. Bake for 15 minutes (or until soft)
  2. Heat Oil in large pan. Sauté garlic (30 seconds). Add Artichoke Hearts and Onion and sauté until onion is soft (5 minutes). Add Spinach and cook until completely wilted (5 minutes).
  3. Stir cheese, egg, Worcestershire, hot sauce, and salt and pepper in large bowl until well mixed. Add artichoke and spinach mixture straight from the stove. Stir until cheese is melted.
  4. Fill zucchini boats with mixture and sprinkle with remaining parmesan cheese. Return to oven and bake for 15 minutes.
Serves 6
