Ingredients
  • 6 boneless skinless chicken breast halves
  • 1⁄2 cup salsa (your choice hot or mild)
  • 3⁄4 cup ketchup
  • 1 1⁄2 Tbsp. Dijon mustard
  • 1⁄4 cup honey
  • 1 1⁄2 tsp. chili powder
  • 1 Tbsp. cornstarch
  • 1⁄2 tsp. cumin (optional)
Instructions
  1. Put the chicken breasts in a 9x13-inch baking dish.
  2. Whisk together all the remaining ingredients (except the cornstarch) until they are well blended.
  3. Pour the mixture over the chicken breasts, coating both sides of the breasts with the sauce.
  4. Bake in the 400 degrees F oven for about 30 minutes (or until the chicken is done).
  5. Remove the chicken breasts and keep warm. Pour the sauce into a sauce pan and stir in the cornstarch that has been mixed with a tablespoon of water. Bring to a boil and allow to thicken, whisking constantly.
  6. Pour the sauce over the chicken and serve.
