Rich Gorgonzola and briny feta flavor these creamy, herby tarts.

Ingredients
  • 3½ tablespoons cornstarch
  • 2 cups plain 2% reduced-fat Greek yogurt
  • 3 Tbsp. 2% reduced-fat milk
  • 1 tsp. grated lemon rind
  • ¼ cup packed fresh mint leaves
  • ¼ tsp. salt
  • ½ tsp. freshly ground black pepper
  • 2 ounces Gorgonzola cheese, crumbled (about ½ cup)
  • 2 ounces reduced-fat feta cheese, crumbled (about ½ cup)
  • 1 egg white
  • 1 large egg
  • 12 small fresh mint leaves
Instructions
  1. Preheat the oven to 325 degrees F.
  2. In a small bowl, combine the milk and cornstarch.
  3. Place the cornstarch mixture, Gorgonzola, feta, mint, yogurt, rind, salt and pepper in a food processor; pulse to blend. With the processor on, add the egg white and egg, and process until creamy.
  4. Spoon ¼ cup yogurt mixture into each of 12 custard cups or small ramekins.
  5. Bake in the oven at 325 degrees F for about 25 minutes (or until the tarts are almost set but still slightly wobbly).
  6. Turn off the heat; leave in the oven for about 5 minutes. Remove from the oven and let cool for about 15 minutes.
  7. Garnish each tart with a mint leaf.
