Incorporating veggies into the morning meal is a great idea, and it's not hard or time-consuming to do. You can spend a few minutes prepping everything the night before (including beating the egg-cheese mixture) to make the next morning a breeze.
Ingredients
  • 5 large eggs
  • 1 ounce feta cheese, crumbled (about 1/4 cup)
  • 1 (5-ounce) package fresh baby spinach
  • 1/2 cup halved grape tomatoes
  • 1/4 cup chopped green onions
  • 1 Tbsp. canola oil
  • 1/4 tsp. salt
  • 1/4 tsp. black pepper
  • 4 (1 1/2-ounce) slices 100% whole-grain bread, toasted
Instructions
  1. In a medium bowl, stir the eggs with a whisk until lightly beaten. Add the feta cheese, salt and pepper, whisking to combine.
  2. Heat a large nonstick skillet over medium heat. Add the canola oil, swirling to coat.
  3. Add the tomatoes and onions, and cook for 1 minute, stirring occasionally.
  4. Add the spinach; cover and cook for about 1 more minute or until the spinach starts to wilt.
  5. Stir the mixture. Pour the egg mixture into pan and cook, stirring gently to incorporate the vegetables, for about 1 1/2 more minutes or until the eggs are soft-scrambled.
  6. Serve over toast.
