- <strong>Tacos</strong>
- 4 6-inch corn or flour tortillas, warmed
- 1 cup sliced button mushrooms
- 1 cup soy crumbles, such as <a href="https://amzn.to/2D7OIDw" target="_blank">Lightlife Gimme Lean</a>
- 1/2 cup shredded carrots
- 1/2 cup diced green bell pepper
- 1/3 cup grape tomatoes, halved
- 2 Tablespoons. chopped red onion
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded Romaine lettuce
- 11/2 Tablespoons vegetable oil
- 1 Tablespoon pickle relish, optional
- <strong>BBQ Sauce</strong>
- 1 Tablespoon vegetarian Worcestershire sauce
- 11/2 Tablespoons ketchup
- 1/8 teaspoon hot sauce, or more to taste
- 1/2 teaspoon honey
- To make the BBQ sauce: Combine all 4 ingredients in bowl.
- To make the tacos: Heat oil in nonstick skillet over medium heat.
- Add the bell pepper, mushrooms, and carrots, and cook, stirring halfway through, for about 3 minutes (until the vegetables are softened).
- Add 2 Tablespoons of the BBQ Sauce and the soy crumbles, and cook for about 8 more minutes, (until the soy crumbles are browned).
- Fill the tortillas with the soy crumble mixture. Top with cheese, tomatoes, red onion, lettuce, and relish (if desired).
- Serve with the remaining BBQ Sauce.
