|A wonderful recipe using fresh strawberries (or blueberries, or any kind of other berries). It’s very dense, but soft and moist, with a very pleasant and smooth flavor.
WeightWatchers Strawberries & Cream Bread Recipe

Ingredients
- 1¼ cups strawberries, fresh & coarsely chopped (or 1¼ cups fresh blueberries or other berries)
- 1¾ cups flour
- ¼ teaspoon baking soda
- ½ teaspoon baking powder
- ½ cup butter, softened
- ½ teaspoon salt
- ¼ cup light brown sugar (use if you want a sweeter bread)
- ¾ cup sugar
- ¼ teaspoon cinnamon
- ½ cup sour cream, room temperature
- 2 eggs, room temperature
- 1 teaspoon vanilla
- ¾ cup walnuts (optional)
Instructions
- Combine the flour, baking soda, baking powder, cinnamon and salt ; set aside.
- In small bowl, beat the butter until creamy. Gradually add the sugar, beat until light and airy (about 1 more minute). Add the brown sugar. Beat in the eggs, one at a time. Beat in the vanilla and sour cream.
- Stir into the flour mixture only until the dry ingredients are moistened.
- Fold in the strawberries (or other berries) and nuts (if using).
- Pour into a greased 8 x 4 inch loaf pan.
- Bake at 350 degrees F for about 60-65 minutes (or until a toothpick comes out clean).
- Let stand for about 10 minutes in the pan, then turn out on a rack to cool.
