A wonderful recipe using fresh strawberries (or blueberries, or any kind of other berries). It’s very dense, but soft and moist, with a very pleasant and smooth flavor.

Ingredients
  • 1¼ cups strawberries, fresh & coarsely chopped (or 1¼ cups fresh blueberries or other berries)
  • 1¾ cups flour
  • ¼ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ cup butter, softened
  • ½ teaspoon salt
  • ¼ cup light brown sugar (use if you want a sweeter bread)
  • ¾ cup sugar
  • ¼ teaspoon cinnamon
  • ½ cup sour cream, room temperature
  • 2 eggs, room temperature
  • 1 teaspoon vanilla
  • ¾ cup walnuts (optional)
Instructions
  1. Combine the flour, baking soda, baking powder, cinnamon and salt ; set aside.
  2. In small bowl, beat the butter until creamy. Gradually add the sugar, beat until light and airy (about 1 more minute). Add the brown sugar. Beat in the eggs, one at a time. Beat in the vanilla and sour cream.
  3. Stir into the flour mixture only until the dry ingredients are moistened.
  4. Fold in the strawberries (or other berries) and nuts (if using).
  5. Pour into a greased 8 x 4 inch loaf pan.
  6. Bake at 350 degrees F for about 60-65 minutes (or until a toothpick comes out clean).
  7. Let stand for about 10 minutes in the pan, then turn out on a rack to cool.
