WeightWatchers Nacho Skillet recipe

Ingredients:

1 lb Laura’s 96% Lean Beef

2 cups corn kernels
-
2 tsp chili powder
-
1 can kidney beans (drained and rinsed)

16 oz tomato sauce
-
1/4 cup red onion (chopped)
-
12 slightly broken tortilla chips
-
3/4 cup reduced fat shredded Mexican style cheese
-
6 tbsp fat free sour cream
-
1 jalapeño (sliced)
-
1 lime (cut into wedges)

1/8 cup cilantro (chopped)
Directions:

Brown beef in skillet

Add corn, chili powder, beans, onion, and tomato sauce. Simmer for 10 minutes

Sprinkle with tortilla chips, cheese, and jalapeños. Cover and let set for 5 minutes until cheese is melted.

Garnish with sour cream, lime, and cilantro. Serve Hot
