6 Green / 4 Blue Points
Ingredients:
1 can (20 ounces) unsweetened pineapple chunks, undrained
1/2 cup packed brown sugar
1/4 cup cornstarch
1/2 cup cider vinegar
32 oz of 99% lean ground turkey
1/2 cut Italian bread crumbs
2 eggs
1 tsp crushed red pepper flakes
1 tbsp Italian seasoning
1 tsp salt
1/2 tsp pepper
1 white onion, cut into 1-inch pieces
cooking spray
1 medium green pepper, cut into 1-inch pieces
1 medium red pepper, cut into 1-inch pieces
Salt and pepper to taste
Directions:
1. Preheat oven to 375 degrees
2. Combine turkey, bread crumbs, eggs, red pepper flakes, salt, and pepper. Hand roll into 32 meat balls. Place in oven for 20 minutes until cooked all the way through.
3. Drain pineapple, reserving juice in a 2-cup measuring cup; add enough water to measure 2 cups. In a large saucepan with lid, mix brown sugar, cornstarch, vinegar and juice mixture until blended. Bring to a boil; cook and stir until thickened.
4. Add peppers and onions sauté until onions are just turning transparent.
5. Add meatballs, cover and let cook for 10 minutes. Stir to cover in sauce and serve. (Rice optional, but it will add points)
