Ingredients
  • 3 large bananas or 4 medium bananas, mashed
  • 2⁄3 cup unpacked brown sugar
  • 3 Tbsp. vegetable oil
  • cooking spray
  • 2 cups all-purpose flour
  • 1 large egg
  • 1 large egg white
  • 2 tsp. lemon peel, grated
  • 1⁄3 cup powdered sugar
  • 1⁄2 cup golden seedless raisins
  • 1⁄3 cup buttermilk
  • 1 1⁄2 tsp. baking powder
  • 1⁄2 tsp. table salt
  • 1 tsp. ground cinnamon
  • 1 tsp. fresh lemon juice
Instructions
  1. Preheat oven to 350 degrees F.
  2. Coat 24 mini muffin tins with cooking spray.
  3. Blend together the brown sugar and oil.
  4. Beat in the egg white, egg, lemon zest and bananas.
  5. In a separate bowl, whisk together the baking powder, flour, salt and cinnamon.
  6. Gently stir half of the flour mixture into the banana mixture; stir in the remaining flour mixture, buttermilk and raisins.
  7. Divide the batter among muffin pans.
  8. Bake for about 10-12 minutes (until a toothpick inserted into the center comes out clean.
  9. Let the muffins cool in the pans for about 10 minutes before inverting onto a rack to cool completely.
  10. To make the frosting, blend together the lemon juice and powdered sugar.
  11. Drizzle the frosting over the cooled muffins.
