WeightWatchers Dijon Parmesan Crusted Salmon recipe

4 Green/2 Blue Points
Ingredients:
  • 1/4 cup Dijon Mustard
  • 2 tbsp fat free mayonnaise
  • 1/4 cup parmesan cheese
  • 1/4 cup panko bread crumbs
  • 16 oz wild caught salmon (cut into 4 pieces)
  • Salt & Pepper (to taste)
  • 2 tbsp fresh dill (minced)
Directions:
  1. Heat the oven to 375 F.
  2. In a small bowl, combine the mustard and mayonnaise.
  3. In food processor, combine the cheese and panko. Pulse for 30 seconds
  4. Sprinkle salmon with salt and pepper. Coat the top of each salmon fillet with 1 1/2 tablespoons of the mustard mixture and 2 tablespoons of the panko mixture.
  5. Bake salmon for 10-15 minutes.
  6. Sprinkle with dill
Serves 4
