WeightWatchers Dijon Parmesan Crusted Salmon recipe

Ingredients:

1/4 cup Dijon Mustard

2 tbsp fat free mayonnaise
-
1/4 cup parmesan cheese
-
1/4 cup panko bread crumbs
-
16 oz wild caught salmon (cut into 4 pieces)

Salt & Pepper (to taste)

2 tbsp fresh dill (minced)
Directions:
-
Heat the oven to 375 F.

In a small bowl, combine the mustard and mayonnaise.

In food processor, combine the cheese and panko. Pulse for 30 seconds
-
Sprinkle salmon with salt and pepper. Coat the top of each salmon fillet with 1 1/2 tablespoons of the mustard mixture and 2 tablespoons of the panko mixture.

Bake salmon for 10-15 minutes.

Sprinkle with dill
Serves 4
