*** 5 Points ***
Ingredients:
4 lbs Pork Loin (lean and trimmed)(1′ cubes)
2 1/2 lbs Tomatillos
4 Pablano Peppers (large chop)
2 Green Bell Peppers (large chop)
4 Jalapeno Peppers (minced)
2 Medium White Onions (large chop)
5 Cloves of Garlic (minced)
4 cups Chicken Broth
2 tbsp Cumin
2 tsp ground coriander
2 bay leaves
3 tbsp Vegetable Oil
Spray Oil
Salt and Pepper (to taste)
Directions:
1. Husk and Rinse Tomatillos place 6 inches away from broiler set to low. Remove when they began to deflate (30-45 min) Take care to not spill the juices
2 Spray Pan with Oil and Brown Pork (set aside)
3. Chop Pablano & Green Peppers and Onions,
4. Mince Jalapeno Peppers and Garlic
5. Heat Vegetable Oil in Large Pot. Add Garlic and Jalapenos. Saute until fragrant (1 min)
6. Add Peppers and Onion. Saute until onion is transparent (5-7 minutes)
7. Chop Tomatillos when cooled. Add them juices and all to pot.
8. Add broth, pork, and spices to pot. Bring to Boil, reduce heat and simmer for 1 hour or until Pork begins to break down.
Note: you can eat with rice and/or tortillas but these will be additional points.
