7 Green / 6 Blue Points
Ingredients:
1 pound chicken tenders or thin cut chicken breasts
salt and pepper to taste
1 tablespoon olive oil divided use
2 teaspoons minced garlic
1 tablespoon Italian seasoning
1 green bell pepper cored, seeded and diced
1 yellow onion, diced
1 ½ cups mushrooms sliced
1/3 cup Kalamata olives halved
1 ½ cups marinara sauce
½ cup sherry cooking wine
2 tablespoons parsley chopped
Directions:
1. Heat 1 teaspoon of the olive oil in a large pan over medium heat. Add the green bell pepper, onion, and mushrooms to the pan and cook for 4-5 minutes or until softened.
2. Add the cooking wine, garlic and Italian seasoning and cook for an additional 30 seconds.
3. Remove the vegetables from the pan with slotted spoon; place on a plate and cover to keep warm.
4. Add the remaining 2 teaspoons of olive oil to the pan.
5. Season the chicken with salt and pepper to taste and place in the pan. Cook for 5-6 minutes per side or until browned and cooked through.
6. Add the vegetables back to the pan, along with the marinara sauce and olives.
7. Simmer for 5 minutes or until sauce is heated through.
8. Sprinkle with parsley and serve
