Ingredients
  • 400 ml semi-skimmed milk
  • 1 large cauliflower, untrimmed
  • 2 garlic cloves
  • 2 tbsp cornflour
  • 25 g parmesan, coarsely grated
  • 75 g extra-mature cheddar, coarsely grated
  • 1½ tsp Dijon mustard
  • 1 tbsp snipped chives
  • 150 ml buttermilk
Instructions
  1. Mix 2 tablespoons of the milk with the cornflour and set aside.
  2. Press the garlic cloves in a garlic crusher to smash – but not crush. Put the garlic in a pan with the rest of the milk and heat until just coming to a boil, immediately removing from the heat and leaving to infuse.
  3. Trim any leaves from the cauliflower and cut out the thick main stalk, then cut the cauliflower into florets. Bring a large pan of water to a boil and add the cauliflower, return to a boil, then simmer for about 5 minutes (until just cooked but still with a bit of bite).
  4. Heat the oven to 200 degrees C / 180 degrees C fan/gas 6.
  5. Tip the cauliflower into a large colander, drain well, then transfer to a shallow ovenproof dish.
  6. Mix both cheeses together. Stir 2 heaped tablespoon with the chives and a grinding of pepper, and reserve for sprinkling over.
  7. Stir the cornflour mix into the warm milk. Return the pan to the heat and bring to a boil, stirring, until thickened and smooth.
  8. Remove from the heat, discard the garlic, then stir in the cheese until it has melted. Stir in the buttermilk and mustard, and season with pepper.
  9. Pour the sauce over the cauliflower to evenly coat, then sprinkle over the reserved cheese mix.
  10. Bake for about 25 minutes (until golden on top bubbling round the sides).
