Weight Watchers Baked Leek and Sweet Potato Gratin Recipe

A hearty, yet surprisingly light sweet potato dish that can be served with a salad or on its own.
- 2 medium sweet potatoes (2 lb.), peeled and cut into 1/8-inch-thick slices
- 3 medium leeks, white and light green parts chopped (6 cups)
- 3 cloves garlic, minced (1 Tbs.)
- 1 1/2 Tbs. olive oil, divided
- 3 Tbs. chopped fresh rosemary, divided
- 3 Tbs. Italian seasoned dry breadcrumbs
- 1/3 cup low-sodium vegetable broth
- Preheat the oven to 450 degrees F.
- Coat a 10-inch round pan with cooking spray.
- Heat 1 tablespoon olive oil in a nonstick skillet over medium-high heat. Add the garlic, leeks, and 1 1/2 Tbs. rosemary. Sauté for about 8 minutes (until softened). Season with salt and pepper to taste.
- Arrange 1/3 of the sweet potato slices over the bottom of a pan, overlapping slightly. Spread half of the leek mixture on top. Arrange another 1/3 sweet potato slices over the leeks, and top with the remaining leeks, followed by the remaining sweet potatoes.
- Drizzle the broth over the dish. Cover the pan with foil and bake for about 35 minutes.
- In a small bowl, stir together the remaining oil, breadcrumbs, and rosemary.
- Remove the foil from the gratin, and sprinkle with the breadcrumb mixture.
- Bake, uncovered, for about 15 minutes (until the breadcrumbs are browned and crisp).
- Let the gratin cool slightly before cutting into 8 wedges. Serve hot.
