These stuffed baked apples are a sweet-savory treat. The stuffing can be made up to two days ahead.
- 4 medium Red Delicious apples
- 1 cup mushroom broth
- 1/4 cup red quinoa
- 1/2 cup wild rice
- 2 Tbs. olive oil
- 1/4 cup finely chopped red onion
- 1 cup finely chopped shiitake mushrooms
- 1/2 cup low-fat cream cheese, cut into small pieces
- 1 Tbs. chopped fresh sage
- 1/4 cup dried cranberries, chopped
- 1/2 cup grated Cheddar cheese, optional
- Preheat the oven to 350degrees F.
- In a saucepan, bring the mushroom broth and 1 cup water to a boil.
- Add the wild rice, cover, reduce the heat to medium-low, and cook for about 50 minutes.
- Stir in the quinoa and cook for about 20 more minutes (until most of the water is absorbed).
- In a skillet, heat the olive oil over medium heat. Add the onion and mushrooms, and sauté for about 7 minutes.
- Stir in the wild rice and sage, and increase heat to medium-high. Cook for about 2-3 minutes (until the liquid has evaporated).
- Remove from the heat and stir in cream cheese. Fold in the cranberries.
- Halve the apples through the stem, scooping out the seeds and core (leaving a 1/4-inch-thick wall around the sides).
- Fill the apple halves with 1/3 cup of the rice mixture.
- Place in a 11- x 7-inch baking dish. Fill the baking dish with 1 cup water, cover tightly with foil, and bake for about 45 minutes.
- Uncover the apples, sprinkle with Cheddar cheese (if using), and bake for about 15 more minutes (until the apples are soft and the tops are beginning to crisp).
