Moist, tender, and super flavorful, these are the best baked apple cider donuts I've ever had, and they are easy to make, too.
- 1 1/4 cups all-purpose flour
- 1 1/2 teaspoon baking powder
- 1/2 cup sugar
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 cup apple cider
- 1/8 teaspoon ground cloves
- 1/3 cup soymilk
- 1 1/2 teaspoon egg replacer, such as Ener-G
- 4 Tablespoons vegan margarine
- 5 Tablespoons apple butter or applesauce
- 1/2 cup superfine sugar
- Preheat the oven to 350 degrees F. Coat a doughnut pan with cooking spray.
- In a large bowl, whisk together the sugar, flour, nutmeg, cinnamon, baking powder, cloves and salt.
- In a small saucepan, bring the cider to a boil and boil for about 10 minutes, or until the liquid is reduced to 1/3 cup; remove from the heat.
- In a small bowl, whisk the egg replacer with 2 Tablespoons water; stir this mixture into the cider reduction.
- Add the margarine, apple butter and soymilk, stirring until the margarine is melted. Cool.
- Stir the cider mixture into the flour mixture.
- Fill each donut mold half full with batter.
- Bake for about 12 minutes, or until a toothpick comes out clean.
- Roll the hot donuts in superfine sugar.
