Ground almonds, often sold as almond flour, give these cookies a light, crumbly crunch.
- 1 cup almond flour or 1 cup whole almonds, ground to a powder
- 1 3/4 cups whole wheat pastry flour
- 1 Tablespoon whole anise seeds
- 1/2 cup pure maple syrup
- 1/2 cup extra virgin olive oil
- 1 Tablespoon vanilla extract
- 1/2 cup sesame seeds
- 1/2 teaspoon salt
- In a skillet over medium heat, toast the anise seeds for about 3 minutes (or until fragrant). Transfer to a coffee grinder and crush to powder.
- In a bowl, combine the almond flour or ground almonds with the pastry flour.
- In a separate bowl, whisk together the syrup, oil, salt and vanilla.
- Stir the oil mixture into the flour mixture, cover, and let rest for about 20 minutes.
- Preheat the oven to 350 degrees F.
- Spread the sesame seeds on a work surface. Shape the dough into 2 8-inch logs, packing it tightly together so it doesn’t crumble.
- Roll the logs in sesame seeds, and place on a foil-lined baking sheet.
- Bake for about 45 minutes, or until firm and browned. Set the baking sheet on wire rack, and let cool for about 5 minutes.
- Using a serrated knife, cut each log into 1/3-inch-thick diagonal slices. Place the flat side down on foil-lined baking sheets.
- Bake for about 15-20 minutes, or until golden brown. Let cool on wire racks.
- Store in an airtight container for up to 2 weeks.
