Weight Watchers Zucchini Spread recipe
Makes 8 servings
Ingredients
3 1/2 cups (about 1 pound) zucchini, unpeeled, shredded
2 tablespoons finely chopped pecans, dry roasted
1/4 cup fresh parsley, finely snipped
1 medium garlic clove, minced
1 tablespoon olive oil
2 tablespoons red wine vinegar
1/4 teaspoon salt
pepper, to taste
Preparation
1. Squeeze the shredded zucchini to remove any excess water.
2. In a blender or food processor, process the zucchini with all the other ingredients (except the nuts) until smooth.
3. Spoon the mixture into a serving bowl.
4. Fold in the pecans.
5. Cover and refrigerate until ready to serve.
6. Serve with crackers, French bread, or as a veggie dip.
