Weight Watchers Vegetable Casserole recipe
Ingredients
2 cups cabbage, shredded
2 celery ribs, sliced with top leaves
1 cup acorn squash, cubed
1 medium carrot, thinly sliced
1 apple, cubed
1 cup onion, sliced
1/2 cup low sodium beef broth
vegetable oil cooking spray
1/4 teaspoon salt
1/2 teaspoon freshly ground pepper
Preparation
1. Preheat the oven to 325 degrees F.
2. Combine all the ingredients in a large bowl; mix well.
3. Pour the mixture into a casserole sprayed with cooking spray.
4. Cover and bake in the oven for about 45-60 minutes.
5. Remove the lid for the last 10-15 minutes.
