Weight Watchers Mujadara (Lebanese Lentils) recipe
Ingredients
1 cup brown lentils
2 tablespoons olive oil
1 medium onion, diced
1 cup brown rice
1/2 teaspoon salt (or to taste)
4 cups water
Preparation
1. Heat the oil in a frying pan.
2. Add the onions and cook on medium-high heat, stirring occasionally, until they are brown.
3. Stir in the lentils and rice, mixing in with the onions.
4. Add the water.
5. Add the salt, mix well.
6. Cover and simmer for about an hour, stirring occasionally (the water will be absorbed into the rice and lentils – make sure they are soft). If needed, add a little more water.
7. Let sit for about 10 minutes.
8. Serve warm or cold, in a shallow bowl.
