Here’s a sweet and spicy carrot side dish. The fruit juice is important to cut the spiciness, so don’t forget about it!
Weight Watchers Jamaican Carrots recipe
Ingredients
1 lb carrots, peeled and sliced
2 garlic cloves, minced
1 tablespoon butter
2 tablespoons brown sugar
1 teaspoon orange or pineapple juice
1 teaspoon fresh lemon juice
1 teaspoon hot sauce
1/4-1/2 teaspoon chili powder
1 teaspoon ground cumin
salt, to taste
Preparation
1. Place the carrots in a medium saucepan, cover with water and bring to a boil over medium-high heat.
2. Cook, stirring occasionally, for about 10 minutes (or until the carrots are fork-tender). Drain and place in a bowl; set aside.
3. In the same saucepan, melt the butter over medium heat. Add the garlic, brown sugar, orange (or pineapple) juice, lemon juice, hot pepper sauce, chili powder and cumin.
4. Cook, stirring, for about 2-3 minutes (or until the sugar bubbles and the spices are fragrant).
5. Add the cooked carrots, tossing to coat them with the sauce.
6. Season with salt to taste and serve.
