WeightWatchers Indian Potatoes with Mustard Seeds Recipe
Here’s a very nice Indian potatoes recipe that can be served as a side to your favorite curry dish. I love to top them with low-fat yogurt and sometimes I also add a little crushed garlic to add some extra flavor.
Weight Watchers Indian Potatoes with Mustard Seeds recipe
Makes 3 servings
Ingredients
4 medium potatoes, peeled and cut into 1/2-inch pieces
1 teaspoon brown mustard seeds
3 serrano chilies, split lengthwise
1 large onion, finely chopped
1 teaspoon cumin seed
1/2 teaspoon turmeric
1 1/2 teaspoons ground coriander
1 1/2 teaspoons ground cumin
1 tablespoon chopped fresh cilantro
1/2 teaspoon cayenne pepper
salt, to taste
Preparation
1. Heat mustard seeds and cumin seeds in a hot dry skillet over high heat, swirling the pan, until the seeds start to pop.
2. Reduce the heat to medium; add the chilies, onions and a small amount of water; cook until the onion is tender (adding more water if necessary to prevent sticking).
3. Add the potatoes, ground cumin, turmeric, coriander, cayenne pepper and salt (to taste), stirring to mix well.
4. Add 2/3 cup water; cover, reduce the heat and cook for about 20-25 minutes, stirring occasionally (until the potatoes are tender and the spices are absorbed).
5. Add a small amount of water at a time if all liquid evaporates.
6. Fold in the chopped cilantro just before serving.
