WeightWatchers Pumpkin Pudding Recipe

Here’s a very tasty and easy to make fat-free and sugar-free treat!

If you find the pumpkin flavor too strong, you can add a banana to the mix.

Weight Watchers Pumpkin Pudding recipe
Makes 8 servings

Ingredients
1 (15 ounce) can pumpkin
1 (1 1/3 ounce) box sugar-free vanilla pudding mix
1 teaspoon pumpkin pie spice
1 cup water


Preparation
1. Mix the water and pudding together until there are no more lumps.
2. Bring to a slow boil in a saucepan.
3. Stir frequently.
4. Remove from heat and fold in pumpkin and spices.
5. Pour into 8 small serving cups.
6. Refrigerate 2 hours until firm.
7. Top with fat free whipped topping to serve (optional – whipped cream not included in the points count).

  • This recipe looked so delicious that it was with real excitement that I went out to buy ingredients. However, it was so gross it was inedible. Perhaps it was the use of sugar free pudding without milk. I guess you can't have everything.

  • I fixed it with a modification. I didn't boil the pudding and water. And I used instant pudding. It wasn't specified cook and serve or instant.....recipes needs that detail. Does the boiling/cooking the pudding and water reduce it to zero points? I ran it through the new SP system and it came out as 1 point. It tasted okay but really miscommunication in the recipe.

  • Wow, I had high hopes for this dessert, but unfortunately it wasn't very flavorful and the texture was odd. The pudding became very gummy while heating, and it never really came to a boil. We topped it with fat free whipped cream and ate it like a dip - we used graham cracker strips to scoop it up. That made it more edible, and it was like the 'crust' for the dessert.

  • I, too, had great expectations for this recipe. It was totally gross! I see why it is 0 points, you don't want to eat it. If it seems to good to be true......

  • DELICIOUS! Honestly like pumpkin pie! I never post comments but because there are so many unfavorable ones.....I feel the need to let people know if u follow the recipe (u MUST use cook n serve sugar free vanilla pudding!), it's wonderful?. This is my new favorite fall dessert. Get the correct ingredients & give it a try!

  • This was delicious! I used the cook cand serve pudding. It was thick enough to pit in a pie shell and will be doing that next time. This is a keeper!
