Weight Watchers Cucumber Logs Filled with Hummus recipe
Makes 6 servings
Ingredients
2 cucumbers
1/4 cup black olives, chopped small
1 (15 ounce) can chickpeas, rinsed
1 tablespoon water
1/3 cup lemon juice, fresh
1 tablespoon extra virgin olive oil
1 teaspoon salt
Preparation
1. Cut off the ends of the cucumbers, then cut each cucumber crosswise into 6 rounds and turn the pieces so they’re flat.
2. Gently scoop out some of the flesh from the top of each cucumber round, making a cup.
3. In a blender or food processor, make the hummus by combining the oil, chickpeas, lemon juice, salt and water (if needed, add more water for creaminess). Puree, then stir in the chopped black olives.
4. Spoon the mixture into the hollowed out part of each cucumber round.
5. Arrange on a serving tray and serve.
