Weight Watchers Corn and Coriander Fritters recipe
Makes 4 servings

Ingredients
1 1/2 cups corn kernel
2 eggs
olive oil
1 cup self raising flour
1/3 bunch coriander leaves, chopped
1/2 onion, finely diced
2 baby shallots, finely chopped
1 piece fresh ginger (approximately the size of half a wine cork), finely chopped
1 teaspoon ground cumin
1 red chili, seeds removed and finely chopped
1/2 cup water
flaked sea salt
black pepper


Preparation
1. Preheat the oven to 350 degrees F (180 degrees C).
2. Saute the onion and ginger in a little oil until soft and translucent.
3. Place 1 cup of the corn kernels, eggs, flour, ginger, onion, cumin and water into a food processor and process until well combined.
4. Place the mixture into a large mixing bowl and stir through the remaining corn, coriander chilli and shallots; season the mixture with sea salt and black pepper.
5. Put a little oil in a non-stick fry pan and set over high heat.
6. Using a 1 oz ladle, cook the fritters 2 at a time for about 1 minute on each side (or until golden).
7. Transfer to an oven proof rack and tray and cook for a further 3-4 minutes in the oven.
