What is goulash? Goulash is a traditional Hungarian dish that’s usually made with beef. The word Goulash comes from the Hungarian word Gulyás pronounced almost the same only with no L, which is a word for a Hungarian Herdsman or Cowboy. A little history of the dish: The plains of Hungary was the perfect place to raise cattle. As the herdsman would go on cattle drives they would butcher the weaker cows that may not make the drive and make a stew or soup from them.
Gulash is one of the four pillars of Hungarian cooking (the other three are porkolt, paprikas and tokany). It’s a very popular dish in the United States too, actually it is/was one of the five most popular meat dishes on the American cooking scene (according to a 1969 Gallup Poll).
This Weight Watchers goulash recipe is a lighter alternative to classic Hungarian beef goulash, using chicken instead. But don’t worry, this easy chicken goulash has the same great flavor thanks to the paprika, peppers and onions!
(Makes 4 servings)
1. Cut the onion into strips, mince the garlic.
2. In a large pot over a medium flame, heat the oil and add the onion and garlic.
3. Cook, stirring, until the onions are translucent (be careful not to brown them!).
4. Cut the peppers into strips, carrots into slices and add to the onions.
5. Add about a cup of the beef stock and bring to a boil.
6. Reduce the heat all the way to low, cover the pot and let everything simmer for about an hour (or until very soft).
7. Cut the chicken breasts into cubes and season according to taste.
8. In a separate pot, cook the chicken on cooking spray.
7. Add the chicken to the vegetable stew (add the rest of the stock if it seems dry).
8. Cut up the tomatoes into cubes, add along with the tomato sauce into the chicken/vegetable mixture.
9. Season with paprika, salt and pepper to taste.
10. Let everything simmer for another 30 minutes or so.
11. Mix the cornstarch with the water and add to the mixture, let it come to a boil.
12. Serve hot.
