Weight Watchers Blueberry Cinnamon Rolls recipe
Makes 12 servings
Ingredients
1/2 cup blueberries (fresh or frozen)
6 tablespoons butter or margarine (softened)
1/4 cup milk
1 egg
1/4 cup sugar
1/4 cup brown sugar, firmly packed
2 1/4 cups all-purpose flour, divided
1/4 ounce dry yeast
1/2 teaspoon salt
1/4 cup warm water
2 tablespoons milk
1 cup powdered sugar, sifted
1/2 teaspoon ground cinnamon
Preparation
1. In a saucepan, combine 1/4 cup milk, sugar, salt and 3 tablespoons butter; heat until the butter melts.
2. Cool to 105-115 degrees F.
3. In a large mixing bowl, dissolve the yeast in warm water; let stand for about 5 minutes.
4. Stir in the milk mixture, egg and 1-1/2 cups flour. Beat with an electric mixer at medium speed until smooth.
5. Stir in the remaining 3/4 cup flour. Turn the dough out onto a lightly floured surface and knead until smooth and elastic (about 8 minutes).
6. Place in a well-greased bowl, turning to grease top.
7. Cover and let rise in a warm place, free from drafts, for about 1 hour.
8. Punch the dough down; turn the dough out onto a lightly floured surface.
9. Roll the dough into a 12×8-inch rectangle; spread with 2 tablespoons butter.
10. Combine the cinnamon and brown sugar; sprinkle the mixture over the dough rectangle.
11. Sprinkle with blueberries.
12. Roll the dough jellyroll fashion, starting at the long side.
13. Pinch the seam to seal (do not seal the ends).
