Weight Watchers Baked Apples recipe
Ingredients
5 granny smith apples, cored, with a 1-inch strip of peel taken from the top
1/2 cup mixed dried fruit, chopped
2 tablespoons dark brown sugar
1/4 cup cornmeal
1/4 cup oats
1 teaspoon pumpkin pie spice
1 cup water
Preparation
1. Preheat the oven to 400 degrees F.
2. In a bowl, mix the dried fruit, oats, cornmeal, sugar and spices.
3. Stuff the mixture into the apple cavities.
4. Place the apples in a 9×9 baking pan and add water (and the spice mixture that didn’t fit into the apples, if any).
5. Bake for about an hour, checking periodically to make sure the water is not cooking away.
