Ingredients
  • 2 cups instant white rice, uncooked
  • 3/4 cup <a href="http://amzn.to/1TbfmuL" target="_blank">Taco Bell Thick & Chunky Salsa</a>
  • 1 can (14.5 oz.) fat-free reduced-sodium chicken broth
  • 1/4 lb. (4 oz.) <a href="http://amzn.to/1Yqkgaw" target="_blank">Velveeta cheese</a>, cut into 1/2-inch cubes
Instructions
  1. In a medium saucepan, bring the combined salsa and broth to a boil.
  2. Add the rice and Velveeta cheese; stir. Cover. Remove from the heat and let stand for about 5 minutes.
  3. Stir until the Velveeta cheese is completely melted and the mixture is well blended.
  4. Garnish with chopped fresh cilantro just before serving.
