Ingredients
  • 4 lbs Yukon Gold or white potatoes (about 10), peeled and cubed
  • ½ cup (1/2 of 8-oz. tub) Philadelphia ⅓ Less Fat than Cream Cheese
  • 1 cup reduced fat or light sour cream
  • 1 slice bacon, cooked, crumbled
  • 2 green onions, sliced
  • 2 teaspoons onion powder
Instructions
  1. In a large saucepan of boiling water, cook the potatoes for about 10-15 minutes (until tender); drain.
  2. Place the potatoes in large bowl. Add the reduced-fat cream cheese, sour cream and onion powder; mash until creamy.
  3. Spoon into a 2-qt. casserole sprayed with cooking spray. Refrigerate up to 2 days.
  4. Remove from the refrigerator 30 minutes before baking.
  5. Heat the oven to 350 degrees F. Bake the potatoes for about 1 hour or until heated through.
  6. Sprinkle with green onions and crumbled bacon before serving.
