A nice refreshing summer soup. Serve chilled to take the edge off a hot August night.

Ingredients
- 1½ pounds zucchini
- 3 cups reduced-sodium chicken broth
- ¾ cup(s) shredded cheddar cheese (reduced fat)
- 1 teaspoon ground tarragon
- ¼ teaspoon salt
- ¼ teaspoon ground black pepper
Instructions
- Place the zucchini, broth and tarragon in a medium sauce pan; bring to a boil over high heat.
- Reduce to a simmer and cook, uncovered, for about 7-10 minutes (until the zucchini is tender).
- Puree in blender until smooth.
- Return the soup to the pan and heat over medium-high heat, slowly stirring in the cheese until it is incorporated.
- Remove from the heat and season with salt and pepper to taste. Serve hot or cold.
