These are the BEST! They taste just like the Thin Mint Girl Scout Cookies but they're so much more affordable, and so easy, even kids can make this in a snap!

Serves: 80 crackers
Ingredients
- 80 buttery round crackers
- 1 lb bittersweet chocolate chunks
- 1⁄2 tsp peppermint oil extract
Instructions
- Melt the chocolate over hot tap water for 15-20 minutes, using the double boiler method. Stir, being careful not to cook or get water into the chocolate.
- After the chocolate has melted, stir in a couple drops of peppermint extract into it.
- Dip the crackers into the melted chocolate, then place onto a cold cookie sheet, and put into the refrigerator to set.
- After a few minutes, take them out and package in candy cups. The cookies are best kept at room temperature or in a cool, dry place away from any odors.
