Ingredients
  • Tacos
  • 4 6-inch corn or flour tortillas, warmed
  • 1 cup sliced button mushrooms
  • 1 cup soy crumbles, such as Lightlife Gimme Lean
  • ½ cup shredded carrots
  • ½ cup diced green bell pepper
  • ⅓ cup grape tomatoes, halved
  • 2 Tablespoons. chopped red onion
  • ½ cup shredded cheddar cheese
  • ½ cup shredded Romaine lettuce
  • 11/2 Tablespoons vegetable oil
  • 1 Tablespoon pickle relish, optional
  • BBQ Sauce
  • 1 Tablespoon vegetarian Worcestershire sauce
  • 11/2 Tablespoons ketchup
  • ⅛ teaspoon hot sauce, or more to taste
  • ½ teaspoon honey
Instructions
  1. To make the BBQ sauce: Combine all 4 ingredients in bowl.
  2. To make the tacos: Heat oil in nonstick skillet over medium heat.
  3. Add the bell pepper, mushrooms, and carrots, and cook, stirring halfway through, for about 3 minutes (until the vegetables are softened).
  4. Add 2 Tablespoons of the BBQ Sauce and the soy crumbles, and cook for about 8 more minutes, (until the soy crumbles are browned).
  5. Fill the tortillas with the soy crumble mixture. Top with cheese, tomatoes, red onion, lettuce, and relish (if desired).
  6. Serve with the remaining BBQ Sauce.
