This nutritious slaw is packed with surprises: citrus, cilantro, and crunchy-sweet apples.

Ingredients
- 3 cups red cabbage, coarsely grated
- 1 Granny Smith apple, cored and cut into matchsticks (11/4 cups)
- 1 medium orange bell pepper, thinly sliced
- 3 Tablespoons fresh orange juice
- 1 cup cilantro leaves, chopped
- 2 Tablespoons apple cider vinegar
- 2 teaspoons whole-grain Dijon mustard
- 1 Tablespoon agave nectar
- 2 teaspoons olive oil
Instructions
- In a large bowl, toss together the apple, cabbage, cilantro and bell pepper.
- In a small bowl, whisk together the remaining ingredients in small bowl.
- Drizzle the dressing over the cabbage mixture, and toss to combine.
- Season with salt and pepper, to taste.
