Ingredients
- 1 (15-oz.) can unsalted black beans, rinsed and drained
- 1 (1-oz.) slice whole-grain bread, toasted and torn into pieces
- 1 large egg, lightly beaten
- 1 tablespoon chopped garlic
- ¼ cup grated onion
- ⅓ cup coarsely chopped walnuts
- 1½ teaspoons fresh lime juice
- ½ teaspoon grated lime rind
- ¾ teaspoon ground cumin
- ½ teaspoon hot sauce
- 4 teaspoons olive oil
- ¾ teaspoon salt
Instructions
- Place the bread in a food processor and pulse 5 times. Transfer to a bowl.
- Combine the beans, garlic, onion, cumin, lime rind and juice, and salt in a food processor; pulse 4 to 5 times.
- Add the egg,bean mixture, hot sauce and walnuts to the bread crumbs; stir well.
- Divide the mixture into 4 equal portions, shaping each portion into a ¾-inch-thick patty.
- In a large nonstick skillet, heat the olive oil over medium-high heat. Add the patties to the pan; reduce the heat to medium, and cook for about 4 minutes on each side (until browned).
- Serve in a bun with avocado, tomatoes and red onion.
