Ingredients
- 2 lb. asparagus, trimmed
- ½ cup silken tofu
- 1 Tbs. nutritional yeast
- 2 Tbs. lemon juice
- ½ tsp. salt
- ⅛ tsp. turmeric
- ⅛ tsp. cayenne pepper
- 2 Tbs. corn oil
Instructions
- Heat the tofu in the microwave for about 30-45 seconds, or until warmed through.
- Transfer the tofu to a food processor and purée until smooth.
- Add the nutritional yeast, lemon juice, turmeric, salt and cayenne pepper; pulse until well combined.
- With the food processor running, add in the oil to finish the sauce.
- Steam asparagus for about 2 minutes, or until crisp-tender. Drain, and serve with the sauce.
