The tangy dressing makes this salad so delicious! Feel free to substitute other fresh salad greens for the arugula.

Serves: 8 servings
Ingredients
  • 4 peaches, pitted and sliced into thin slices
  • 10 cups arugula
  • ⅔ cup slivered almonds
  • 2 green bell peppers (2 cups), finely chopped
  • 1 Tbs. fresh orange juice
  • 2 Tbs. white balsamic vinegar
  • 2 Tbs. olive oil
  • ½ tsp. grated orange zest
  • ¼ tsp. salt
  • ⅛ tsp. cayenne pepper
Instructions
  1. In a large bowl, combine the peaches, arugula, almonds and bell peppers.
  2. In a separate bowl, whisk together the orange juice, vinegar, oil, orange zest, cayenne pepper and salt.
  3. Just before serving, toss the salad with the dressing.
